THE REGION & LOCAL INGREDIENTS

Our connection to western Queensland is fundamental to how and why we make spirits. The climate is not simply a backdrop: extreme heat, cool nights, low humidity and seasonal variation actively shape our production decisions and the character of our whisky.

We cultivate native botanicals on our Roma property and source additional ingredients from regional growers where scale requires it. Our gin range features ingredients including desert lime, saltbush and lemon-scented gum, selected for their flavour as much as their provenance. Seasonal fruits are harvested at their peak and carefully preserved to protect their aromatic character throughout the year.

Every drop of water used in spirit production is harvested rainwater collected from our roof catchments; bore water is reserved for irrigation. We also use local citrus and transform market-reject dates into our Sticky Date Liqueur, ensuring excellent produce is not wasted.

Our whisky cask program also connects to the region’s agricultural history, including the former grape-growing and fortified-wine heritage of western Queensland. Above all, ODC is about capturing this place with precision and intention - not romanticising the Outback, but allowing its real conditions to show up in the glass.
